Vali Ambat is a popular Konkani dish which is filled with protein, fiber, and other important nutrients such as calcium, iron, and Vitamin A.
Ingredients:
Malabar spinach Coconut gratings – ½ coconut Toor dal ( Optional ) Onion Red chilies – 4 to 5 Tamarind Jaggery Salt Coconut oil
Procedure:
1. Wash & chop the vegetables. Remove the fibers of the stalk & cut 2 inch pieces of the stalk. 2. Cook toor dal in pressure cooker & mix this with chopped Malabar spinach. Cook for 5 minutes. 3. Grind coconut gratings, oil roasted red chilies, small lime size ball of tamarind. Make fine paste of it. 4. Add this to the mixture of cooked dal & Malabar spinach. Add salt & jaggery to this. 5. Heat coconut oil in a pan & stir fry chopped onion in it & add this to the dal. Cook it for few minutes & turn off the flame. 6. Serve hot with rice or bhakari.
