Serves: 6-7 people
1 medium onion
½ cabbage
1 medium carrot
1 small beet root
1 tbsp oil
5 cups of water
½ teaspoon grated ginger
½ teaspoon coriander powder
¼ th teaspoon chili powder
½ teaspoon cumin powder
½ teaspoon turmeric powder
1 teaspoon salt
1 tbsp lemon juice
2 tbsp chopped cilantro
1. Wash all the vegetables and cut into 1 inch pieces.
2. Heat oil in a big vessel. Add onion and stir fry for 3 minutes.
3. Add other vegetables and stir fry for 2 minutes.
4. Add 2 cups of water, ginger, turmeric, chili powder, salt and cook for 10 minutes.
5. Add coriander and cumin powder for 10 more minutes.
6. Add 3 cups of water and cook for 5 more minutes.
7. Before serving add lemon juice, chopped cilantro and mix well.
8. Serve the soup hot.
